Sangrado
(Draining)
Procedure of separating the skin from the must, draining it, so that the liquid is drained and the solid residues are kept.
Solerado Similar to the aroma that can be breathed in a winery where “oloroso” (fragrant) wines are made.
Sombrero

Solid pulp originated from the skin that keeps floating above the must while the fermentation process lasts.
